VEGAN CREAMY AVOCADO PASTA

A delicious and nutritious dish that features a rich and creamy sauce made primarily from ripe avocados.

Ingredients
  

  • 1/2 Avocado
  • 2 oz. Fresh Basil
  • 2 Cloves Garlic
  • 2 Tbsp Lime Juice
  • 1 Tsp Agave
  • 1/4 Cup Coconut Aminos
  • 2 oz. Sundried Tomatoes
  • 1 Pinch Salt & Pepper (to taste)
  • 6 oz Spaghetti (I used brown rice pasta)

Instructions
 

  • Cook your pasta following the package instructions, then set it aside to let it cool down.
  • In a food processor, add the avocado, basil, garlic, lime juice, and Coconut Aminos; then process everything to until it becomes a puree.
  • Transfer your avocado puree into a mixing bowl and add the salt, pepper, sundried tomatoes and your cooked pasta. Mix everything well to incorporate and that's it!
