Vegan Avocado Pesto Pasta
Ok, this is a gem in hiding. I’m a mom of two toddlers and every now and then, I get crazy busy (obviously i’m being sarcastic, cuz that’s my default setting), so this vegan avocado pesto pasta has been a life savior! This literally takes 15 minutes to make, including time to cook the pasta. If you blink while watching the video, you might miss the whole recipe, lol. This recipe works well with any pasta. I love my spaghetti, so that’s what I use. To make it a little healthier, I’m using a gluten-free version, but it’s really up to you. The real star of the dish is really that avocado pesto. Once you choose your pasta, cook it following the package instructions, then set it aside to let it cool down.
The Avocado Pesto
To make the avocado pesto, add the avocado, basil, garlic, lime juice, and Coconut Aminos in a high speed blender or food processor, ; then process everything to until it becomes a puree. It’s really important that you use a good high speed blender; otherwise, you’ll end up with a lumpy pesto, but we want it as creamy as possible. Remember that the pasta needs to soak all that creamy goodness.
Transfer the avocado puree into a mixing bowl and add the salt and pepper. Give it a good mix and adjust the salt and pepper to taste. Then add the sundried tomatoes. I use smoked julienne cut sundried tomatoes and they add such flavor and texture to this dish. They make it look like more effort were put in to make the dish :).
Finally, add the cooked pasta. Mix everything well to incorporate and believe it or not, our vegan avocado pesto pasta is ready. A delicious dish cannot be any easier to make. Cheers to lazy recipes! Enjoy and stay blessed.

VEGAN CREAMY AVOCADO PASTA
Ingredients
- 1/2 Avocado
- 2 oz. Fresh Basil
- 2 Cloves Garlic
- 2 Tbsp Lime Juice
- 1 Tsp Agave
- 1/4 Cup Coconut Aminos
- 2 oz. Sundried Tomatoes
- 1 Pinch Salt & Pepper (to taste)
- 6 oz Spaghetti (I used brown rice pasta)
Instructions
- Cook your pasta following the package instructions, then set it aside to let it cool down.
- In a food processor, add the avocado, basil, garlic, lime juice, and Coconut Aminos; then process everything to until it becomes a puree.
- Transfer your avocado puree into a mixing bowl and add the salt, pepper, sundried tomatoes and your cooked pasta. Mix everything well to incorporate and that's it!
